Cooking with Wood: Tips, Tricks and FAQs

The concept of cooking with fire can be hard to grasp. We are so used to touching a button or turning a dial to cook, that we forget how natural and comforting it can be to cook with flame. Here’s some of our top tips and tricks for cooking with wood, and some FAQs people have about wood cookstoves. 

What can you cook with a wood stove?

You can cook the same things you would in an electric or gas stove! Everything from bread and delicious roasts to gourmet pizzas or yummy pies. Don’t be afraid to get curious and see what the flavor of fire does to your favorite foods.  

How do you manage temperature when cooking with a wood stove?

Controlling the temperature is key to successful wood-fired cooking, but it can take a bit to get used to it. After that, it’s like riding a bike. You can regulate the overall stove temperature with the air intake dampers on the side of the stove, and the oven more specifically with the oven bypass damper at the back of the cooktop. It’s all laid out in the manual. For consistent baking temperatures, establish a good bed of hot coals; then add a few small pieces of wood as the fire progresses. Avoid adding large chunks of wood, as these will cool the oven down until the wood gets burning again. Big chunks, packed tightly, are perfect for that long heating fire you want during the day or overnight.

A stove thermometer will let you see just how hot your oven is. 

Are wood burning stoves safe?

Another major assumption about these ovens is that they’re dangerous. Wood burning stoves are absolutely safe when used and maintained properly. If you do have a wood burning stove, make sure you:

  • Follow any local building codes or regulations for having a wood burning stove.
  • Have a fire extinguisher handy by your oven. 
  • Keep the space well ventilated, potentially with an overhead fan. 
  • Keep any chimneys clean and clear.
  • Don’t burn pressure treated wood or cook with wood that has any potentially toxic materials on it. 
  • Clear out old ash or soot to keep it working properly. 

What maintenance do wood burning stoves need?

Regular maintenance for these stoves include cleaning the chimney and flue regularly, removing ash buildup, and inspecting the gaskets for any signs of wear. Doing these checks often will keep it working well, and extend the lifespan of your stove.

A love of everything vintage

”I’ve loved decorating since I was a teenager. It’s something I’ve loved forever. It was something that takes time, and it does take time to learn your style and what works for your house.

A year after we bought our first house, I started more modern farmhouse, but it clicked really quickly that I Iiked the vintage style. So around 2017 was when I really started playing around with the vintage side of design. Antique or Vintage farmhouse — all things old. 

Because I live in New England, we have a lot of great antique shops, but I also love looking for modern-vintage things on Etsy or any local shops. “

When it comes to design, trial and error is key

“When you’re getting started in design, the best piece of advice I can give is to just try. That’s why Iove DIY so much, and our own kitchen was very much a trial and error of figuring out what works. You can always change something if you don’t like it but without that risk, you’ll never discover what your taste is.

Everything is more expensive if you want to hire someone to do it — almost triple the cost. When I started documenting our experience updating our home, my big push was to show DIY to people and to help them see how approachable it is. Because it really is! It’s easy to do it, you just need to get started. 

You don’t need to take down a bunch of walls to transform your space.”

The Victorian Era–1837 to 1901–was so named because it was when Queen Victoria reigned. You may also know it as the time period of the Crimean War, Jack the Ripper, the rise of industry, and the growth of the British Empire as a whole. But, let’s get to the kitchens. 

Technological advancements

The revolutionary breakthrough of this period did have an impact on kitchens. Kitchens were built to be functional, with little decor. Fire was still used for cooking, but it was during this time period that cookstoves took over for open hearth cooking. Wood and coal powered these beginner-stoves. 

One of the other bigger changes at this time wasn’t so much in the kitchen itself as what could be cooked within it. As transportation advancements happened, kitchens could be filled with goods from outside their own region. 

Inward VS Outward Orientation

One of the easiest ways to tell a Victorian from a modern kitchen is how things are oriented. Today, our kitchens are outward-facing, without counters and the main kitchen workspace being along the perimeter of the kitchen: It makes it easier for cooks to move along a line and work in progress with each other. 

Victorian kitchens, on the other hand, were inward-facing. They had a surprising lack of “counter space” on the outside. Instead, in the center of the kitchen, a large, sturdy table would be used for chopping, mixing, and non-appliance cooking. The perimeter of the kitchen would hold storage space, stove, sink and perhaps an icebox.

The Appeal of Old Victorian Kitchens

Victorian-style kitchen appliances truly make a statement in your home – especially when you can choose your own color. They were warm with wood-burning and coal stoves, dark wood, and busy chefs moving around. We spend so much time in our kitchens, it’s no surprise that something cozier and comforting appeals over restaurant-style stainless steel.

If you like “slow cooking” with family and friends, then the central workspace or large table could work better for you. If you haven’t tried it before, test it out! The impact that color has on your mood and mental wellness has been researched and explored for years now, and there are numerous studies that prove that there is in fact a correlation. 

These studies have been used not just in kitchens and homes, either. They have looked at the impact of color choices in workplaces, prisons, universities and schools, and even on reducing road rage.

Colors, Their Meanings and Psychological Impact

Different tints and shades of colors can cause variations, but these are some of the most common psychological effects for classic colors. 

White

White is popular in commercial kitchens because of its connection to cleanliness and purity. Aside from making any and all dirt stand out, white is also a neutral color and can provide “space” between other colors or elements. White is best used in kitchens as a backdrop color to make any other materials or colors pop. 

Red

Red may be a good color for kitchens because it can actually make you feel hungry! That’s why many fast food places–McDonalds, KFC, Pizza Hut, Arby’s, etc–use red in their signage. Red is a bright and energetic color that can invoke a lot of intense moods. There’s a reason red is connected to love, anger, passion and danger. 

Green

Green is said to be one of the most soothing colors. There are some studies that show looking at green can relax our nervous system and calm us down. This color, so connected to nature and growth, may be one of the most natural colors in our world. Using green in your kitchen can make it feel cozy, inviting, airy and fresh.

Blue

Blue is one color where shade makes a big difference. Dark shades can be more somber and quiet while lighter blues can be calming. Blue is actually the recommended color for bedrooms. Many doctors offices and medical facilities will use a light blue on their walls to help keep people calm.

Black

Black, so connected to mystery, power and sophistication, is considered a timeless color. Because it absorbs light, it can make it feel smaller, a bit more closed in. Much like white, black can be a great backdrop for a kitchen, especially if you choose specialty finishes or colors for your appliances to pop against the color. 

Yellow

Yellow is an overall happy, positive and warm color. Bright yellow can be a stimulating color and make you feel more awake. If you struggle to get into the kitchen and make your coffee and breakfast in the morning, yellow could be a good choice for your kitchen.

Building a Color Scheme

When you’re building a color scheme for your kitchen, you need to think about a few things.

1. How does my kitchen fit into the rest of my home?

If your living space is open concept and your kitchen blends into the rest of the home, you will want to ensure your color choices are done purposefully. If you have a purple living room, bright orange or red in your kitchen won’t go well together. Of course, there’s always personal preference, and if you like the cool of high-contrast colors, then go for it! But it is something to be mindful of. 

2. How often do I like change?

Maybe you like to update your house colors based on the season–pinks and greens in spring, yellows in summer, oranges in falls, and reds and greens during winter. If so, a more neutral backdrop and base color for your kitchen will give you the foundation for adding and changing color as you like. Choosing neutral wall colors and appliances–like a bisque refrigerator or textured black range with chrome finishes–may be a better choice.

3. What is the big picture?

You may be piecing together your dream kitchen based on individual preferences. Maybe you love the butcher block countertop, the gray herringbone backsplash and also the liberty blue Heritage gas-top range. Individually–beautiful. 2023 Kitchen Colors

In 2023, the top colors for kitchens are grays, warm beiges and other neutral colors.

Neutrals have been common for a while, but the end of 2023 and 2024 will shift into warmer colors, deeper grays, off-whites and creams. 

1950s Retro Kitchen Colors

Classic 1950’s retro kitchen colors include bright cherry reds, shocking blues and warm mint greens and yellows. Metal accents like chrome on appliances or metal cabinets help to build that retro aesthetic, too. 

Retro kitchens are a color scheme and design aesthetic that are making a comeback. 1970s Vintage Colors

The 1970s kitchens were known for their wood cabinets, patterned backsplash, tiles, and yellow and orange accents. The “modernization” of “old” kitchens meant that gadgets were the thing to get. Electric knives, bun warmers, popcorn poppers  and fondue sets were staples in a 1970s kitchen.

Victorian Turn-Of-The-Century Kitchen Colors

Another growing kitchen trend follows the Heritage collection aesthetic–Victorian and turn-of-the-century vibes with modern day features. This type of kitchen design works best with neutral colors and natural materials. Black, white, off-white, browns and taupes do well with this style, as do wood and copper accents.

Master Chef Canada Winner Jennifer Crawford Goes “All In” on Cooking, Wrestling – and Life

In life, it’s not often you come across someone who is truly dynamic that draws you in the way Jennifer E. Crawford, the 2019 winner of Master Chef Canada, does. During their stint on the show, they quickly became a fan favorite by letting their spunky personality shine and creating awe-inspiring dishes that look too good to eat.

Once called “the most talented home cook we’ve seen in six seasons,” Jennifer is much more than a talented food enthusiast. Whether creating new recipes or preparing for the next big wrestling match, she is a colorful personality who loves to throw down in the kitchen and the ring. Since their monumental win, Jennifer has made a name for themself in the culinary world by collaborating with elite chefs, participating in speaking engagements, and writing for food columns.

Recently, Jennifer has been working with their partner to renovate a mid-nineteenth-century farmhouse. We had the opportunity to catch up with Jennifer and chat about their latest projects, including their kitchen renovation and the inspiration behind designing the space.

Q. You’re such a dynamic and interesting person. Can you share a little about yourself?

A. I really love a lot of things and try to design my days to make as much room as possible for all of them! I grew up in Kingston, Nova Scotia, and now I am so grateful to live just 45 minutes from there. There are a few pillars that I build my life around: creativity, athleticism, food, sobriety, friends and, most importantly, love – of life, pursuits, and people.

Q. Food obviously plays a huge role in your life. When did you fall in love with cooking – and what do enjoy most about it?

A. Even my earliest memories are of food. When I was 3, my favorite snack pairing was maraschino cherries and black licorice. By 8, I was making lattice-top apple pies. For a kid to have the chance to mess around in the kitchen, screw things up, and get things right – does so much for self-esteem and developing a growth mindset. You can always be learning, and no one ever starts at the top. Imagination is a big part of my life – food is a chance, each day, to manifest those things with your own hands and then share the joy and vulnerability of it with others.

Q. When, and how, did you start your wrestling career?

A. Pro-wrestling is a huge part of my life – first as a fan, then as an athlete. As a kid, I was just dazzled by the glamour, the macho energy balanced by how fancy and sparkly it all was. In 2018, I trained and went hard – I flamed out, struggling with PTSD and addiction. When I addressed my issues, I was determined to take another go at it, and I’m so grateful I did. Since winter 2020, I’ve been training in earnest and had my first match in July 2020. I’ve fought in multiple matches throughout Nova Scotia – it is a dream come true.

Q. What’s your training regimen like?

A. Training reminds me daily that I can do hard things and rise to the occasion to do them with consistency and determination. It’s very dynamic, and the variety keeps my brain happy – lots of strength movements, gymnastics, agility, and intense cardio that I like to take to the limit. Training is for the mentality, knowing that you can execute exceptionally difficult movements under fatigue and pressure, keeping yourself and your opponent’s safe. Whenever I don’t feel like training, I remember that it’s not all about me – it’s about keeping my fellow wrestlers safe and about the people who have paid their hard-earned money to see us do what we love. Care for others is often the thing that gets me off the couch and under the bar each day. 

Q. How would you describe your personal style and aesthetic? What inspires you?

A. “Chaotic good” might best describe my style and aesthetic. Inspiration comes from everywhere – I don’t talk about this a lot, but I love art, poetry, and philosophy. I love thinking about how capitalism affects our personal choices in how we live our lives, how we dress our bodies and why and how it limits us and could set us free, even a little bit each day. Colors, textures, and shapes affect me a lot, and that’s true for how I adorn myself and plates of food.

Q. You’re renovating an 1866 farmhouse in Nova Scotia’s Annapolis Valley. How did that come about?

A. Winning MasterChef Canada gave me the chance to move back to my beloved Nova Scotia. I couldn’t believe that they handed me a $100k cheque. It still feels sublime, strange, and other-worldly to me. My main thought was, “Ok, I will not squander this precious, weird opportunity.” I didn’t want to play small – so I went big. A farmhouse and 2 acres big. The gratitude I feel to be here is just as intense two years plus later as it was the day I first walked through the door.

Q. As part of the renovation, you recently re-designed your kitchen. What was your inspiration for the kitchen?

A. Kitchens are where I’d live day in and out if I could. When designing it, I thought about it as the beating heart of my home – there had to be warmth, room for people, and ample space for being together. I have a lot of little collections that are precious to me – I love being able to see all my treasures lined up together, co-mingling a million memories and feelings when I glance in their direction.

Q. You chose an Elmira Fireview woodburning cookstove for the kitchen. Why did you decide to go with a cookstove – and the Fireview, in particular?

A. Literal warmth from a fire always translates into emotional warmth for me. Tending to a fire bespeaks a willingness to care for something – it feels like an act of care and precision when cooking is involved. Intimacy with my cooking tools makes me so excited – getting to know my stove these past few months has blessed my life with immeasurable joy and meaning. Cooking by fire is not hurried – it demands attention and time, the two things necessary for care and love. Loving cooking isn’t just about making food. It’s how we allocate our emotional resources and share them with others. Hopefully, this doesn’t sound too “woo,” but I’ve learned a lot about myself cooking like this, too. There are techniques and flavors you can create with fire that simply aren’t possible to replicate with gas, induction, or electricity – not to say those things are bad, they all do different things. I want my life to feel unhurried to let myself focus fully on what I’m doing, have as many avenues as possible for expression and creation. By design, the Fireview builds this freedom into my life every day.

Q. What dishes do you like to prepare with your Fireview?

A. Oh, I have so many favorite things to make with this stove. Sourdough, meatballs, babka, pastries, challah, roast chickens… but if I had to pick one, it might be charred broccoli. I’m kind of a fussy kid when it comes to eating vegetables, but this dish knocks my socks off every time. I char broccoli on the hot coals, chop it up, then finish it on the cooktop with lots and lots of parmesan, chopped parsley, lemon, garlic, and briny chopped anchovy. Even better if I get to pile it high on a slice of warm butter-fried sourdough from the oven. Making both at once with this stove is an other-worldly experience and such a complex flavor profile.

Q. What first attracted you to Elmira Stove Works appliances?

A. Classic, elegant, thoughtful pieces that withstand time and hard work have a gravitational pull on my heart. Elmira Stove Works appliances already have a long legacy of beauty and durability. Throughout the 1940s, 50s and 60s, color played a prominent role in kitchen design. During these times, appliances came in many colors – ranging from deep forest green to flamingo pink, and well… pretty much everything in between. The broad spectrum of available colors gave homeowners the opportunity to bring a bit of personality into their kitchen.

Over the years, however, the popularity of custom-colored appliances waned, and neutral hues such as white, black – and ultimately – stainless steel have dominated kitchen design ever since.

Recently, the popularity of colorful appliances has reemerged, as people want to add more character to their spaces. What better way to do this than by including a bold pop of color? Not only does color make a statement, but it will set your kitchen apart from the pack with its unique style.

Jewel Tones

Rich and deep, jewel tones can be an alternative to traditional neutrals in your kitchen design, and can be incorporated the same way you would colors like white, gray or cream. The Gemology Collection captures the brilliant essence of the cardinal gemstones: Amethyst, Emerald, Ruby and Sapphire.

Saturated and reflective, these nature-inspired colors will add depth and rich dimensionality to your kitchen. Consider including a Heritage refrigerator in Ruby to create a focal point, without overwhelming the space.
